It’s Sunday and I’m ready to start the week with aaall of the veggies. One of my favorite parts of recipe development is dreaming up how many colorful veggies I can pack into a dish. You guys already know I love me some zucchini in meatballs and pizza crust, and these 24 delicious dinners don’t skimp on veggies or flavor.
We’ve always been taught that the more colors on your plate the better, but admittedly this can be hard to do sometimes. That’s why I focus on making dinners for you that are easy, accessible, and make eating veggies fun and interesting. They’re a great way to add texture and flavor to a dish, plus plenty of fiber to keep you feeling nourished and satisfied. I’ve included a mix of meat and plant-based options that are easy to customize with your favorite proteins, so mix and match these dinners throughout the week!

You have obviously lost your mind or live in the lap of luxury and dont have to work! 2 kuds, activities, husband and job. Too tired on Sundays to batch prepare too. We need receipes that take real ingredients we dont have to add the market to for the week, and take only minutes to prepare.

Yes, time to pack in all the veggies! It’s very easy for me to consume plenty of vegetables on a daily basis. The Thai cauliflower chickpea curry, chickpea pumpkin curry, orange ginger chickpea stir-fry, roasted veggie quinoa salad, tofu tikka masala, and lemongrass chickpea Thai curry look freaking fantastic! I would eat them all day any day!
